It's that wonderful time of year where the air gets crispy and we start wearing sweaters. Hot drinks sound good and harvest time starts across the land. For me growing up that meant fire wood and applesauce. Although both were "chores" growing up, now that I'm out of the house and don't have that fresh tasting applesauce to top my Saturday morning pancakes, I missed those days. Because of that, this year we decided to make a batch or two (or five) of apple sauce to stock our freezer too. I share with you here the top secret applesauce recipe for chunky fresh applesauce.
Now that it's all in the pot you let it go over medium heat. I used the wooden spoon to stir until the apples get soft. Occasionally test out the masher. As soon as you are successful and mashing the apples you can switch over full time to the potato masher. Continue mashing the apples over heat until the applesauce reaches the consistency you are hoping for. For my family, that means there are still wonderful chunks of apple left behind which is why we use the mashing process. Once you have it to the consistency you want, put in a bowl to cool. Keeping in mind that we used just what was shown before, we made about five batches. which filled a pretty big bowl! You can also see the preferred consistency of our sauce. Next to it are old soup containers from Costco and tupperware that we plan to use for freezing which is our storage method. This makes it fast keeps it tasting fresh and hard to mess up! Which are all good things! I thought that the containers could use some dressing up, plus it's always good to date things that go in your freezer in case it gets lost in a corner for a couple of years, so I made some super high end labels using computer paper and sharpies. In the end our bucket made a healthy amount of applesauce! It packed our freezer pretty full which meant, I most sacrificially had to finish the ice cream to make room. Fortunately, I had some fresh warm applesauce to top it with!
